I promised I would post a few recipes from my weekly menu each week, and as for what we had, I did take a few pictures of some things, but some just were't to my liking but these two babie's where! Jordan liked them just as much as well, which makes these two recipe's for sure go into the tried and true! One thing about these two recipes is that they are super simple, and....super delicious! So I made these tostada's Thursday Night, and let me tell you, there wasn't a speck left of either of our plates! ;-) They go together in a flash, and they are gone in a flash! If you like mexican food, I would recommend making these guys! You can do whatever variations you want. The recipe I made didn't have beef or any meet, just beans, so I just made some taco ground beef, and yummmmm! You can do shredded beef or chicken, or pork or whatever your heart desires! We didn't put any dressing on it, Just some quacamole, sour cream and salsa! So, now your probably dying for me to share the recipe! I found this at Simply Recipes. I used to read this blog a few years back, and went back to it the last few weeks and Have loved some of her ideas, hence why I have about four of her recipes for next week! So go on over and check out her Mexican Tostada's. You will not be dissapointed!!
As for the Rice Pudding! I got this recipe out of one of my mom's new cookbooks Worldwide Ward Cookbooks "Mom's Best Recipes". Its an awesome book, and I have a few other recipes marked for it! I made this at the begining of the week for breakfast, and I had a peice and Jordan ate the rest! So as you can tell, we each enjoyed it! It's a custardy texture, and you can make it with more rice if you don't like it like that, but if you do, you will love just the way I made it! So since I can't give you a link, I will just share this recipe with you all. Just know it's not mine, its from this wonderful book! Rice Pudding
1 cup cooked rice
3 eggs
3/4 c. sugar (You may want to add just a tad more if you like it sugary)
1/4 tsp. salt
3 c. milk
1 tsp. vanilla
cinnamon (for garnish, but I mixed it in, because we love cinnamon)
1. Preheat oven to 325 degree's
2. Spread rice out in an 8x8 pan.
3. In seperate bowl, beat eggs, sugar, salt, and stir in milk and vanilla.
4. Pour over rice, and sprinkle with cinnamon.
5. Place in larger pan and add water to at least half way up the smaller pan.
6. Bake for 1 1/2 hrs and will be done when sides and middle jiggle easily. Make sure the middle jiggles the same as the reast to make sure it is completely finished.
7. ENJOY!
