Weekly Menu Planning 4/19-4/23


It's that time again! I'm on a roll, I did a week and now i'm onto the next! I Feel like I'm starting to accomplish many things and it's very exciting! I did stay pretty much exactly on for last week's menu, made an add on for monday (breakfast for dinner) and then ended up not making friday's meal. We decided to go out to dinner Friday night, then I though, oh, I'll just make them on saturday, but we had a VERY fun day going swimming up in Driggs, at Green Canyon Hot Springs, and then took a trip to Idaho Falls, and my sweet hubby took my out to Outback! We got steak and crab, and it was YUMMY!

It felt so much like summer yesterday, and today! You can walk around in a shirt, and I even wore a skirt! It was BEAUTIFUL! I like this time of year here in Idaho!

Well, today we have FHE with Jordan's family, at his mom's house and we are in charge of bring a salad! His mom mentioned bring the Strawberry Spinach salad I made for my Relief Society Dinner and I had a lot of the stuff for it, so I decided why not! So I won't have a new recipe to share with you for that, but it is super yummy and makes it feel like spring and summer as well!

So, this week Jordan starts school again, I get back to a somewhat more normal work week, and we each are starting to workout! Jordan has his workout class each morning at 6am, and I have told myself over and over, "I Am Getting Up and GOING!" So I am three days a week at 6am going to go with him to school, and either work out in the gym, or walk to track or do something on those three days, and then on three other days, going to do my own working out, either here at our gym where we live, or do a dvd that we have or the wii, or just go for a walk to relax! I want to start incorparting more healthy meals as well, so that's going to start probably next week when I can get a new menu and go shopping as well! But, we really do have some yummy healthier recipes this week, loaded with veggies and flavor! So here's what's going to be cooking in our kitchen this week:

Monday: Cheesetake Sandwiches w/ chips

Thursday: Slow Cooked Pork Carnita Taco's w/ Sauted Veggies & Cilantro Rice

Saturday or Sunday: Leftover Carnita's (Taquito's) W/ quacomole & sour cream

Now, as I have told you all before, some times the menu changes or a lot of it goes into the next week because we end up eating leftover's or something comes up, but this is what is in my planner and I am SO excited! ;-)
